Artificial Intelligence continues to expand into different industries with some unpredictable outcomes, raising ethical concerns about the use of the emerging technology. In the most recent news, the University of Geneva (UNIGE) and the Institute of Vine and Wine Science at the University of Bordeaux revealed AI could identify the molecular composition of red wines “with 100% accuracy.”1 By processing data with machine learning, researchers were able to identify the unique chemical signature for 80 wines from seven different Bordeaux appellation estates. Researchers indicated the technology may prove instrumental in detecting counterfeit products; replacing sommeliers might be more of a challenge as the pairing of wine with food can be highly subjective and “a matter of taste.”
